Football season is upon us and it’s time to start looking at some great game day treats you can get going on your Kamado Joe! This beer pretzel recipe with the beer cheese dip is an amazing place to start!

Beer Pretzels

590 grams (about 4 1/4 cups) all-purpose flour
355 ml (1 1/2 cups) beer
6 grams (2 tsp) active dry yeast
pinch of salt

3 quarts water
1/2 cup baking soda

1 to 2 eggs with 1 to 2 tbsp water for egg wash
coarse kosher salt for pretzels

Add the first four ingredients (warm the beer if possible) to the bowl of a stand mixer and mix with a dough hook for about 10 minutes. Remove the dough and shape it into a ball in a bowl, cover with plastic and let rise in a warm area for 1 hour. You may need to go 90 minutes if the beer starts out at room temperature. While your dough is proofing, preheat your grill to 425°F and setup for indirect cooking on your pizza stone. After the dough rises, punch it down and portion it into about 8 equal pieces. Roll each piece into an 18″ rope and cut each into 3 equal length pieces. Set aside on parchment paper and cover with a damp towel and let rise for another 20 minutes. Heat 3 quarts of water to a simmer and add 1/2 cup of baking soda. Add the pretzels in batches to the water for 30-45 seconds at a time and then remove to parchment paper. Based with egg wash. Top with coarse kosher salt. Place on pizza stone on the grill and cook for about 15 minutes until golden brown.

Beer Cheese Dip

3 tablespoons butter
3 tablespoons all-purpose flour
1/2 cup beer
1 cup whole milk
1 teaspoon dijon or whole grain mustard
1 teaspoon worcestershire sauce
1/2 tsp salt
1/2 tsp garlic powder
1/4 tsp black pepper
1/8 tsp cayenne pepper
3 cups shredded cheese of your choice

Melt the butter in a pan over medium high heat. Wisk in the flour, wisking constantly until the flour starts to brown a little. Reduce heat. Add the beer and wisk until the roux thickens. Add the milk and wisk constantly until smooth. Add the mustard and worcestershire sauce and wisk until combined. Add the salt, garlic powder, pepper, and cayenne and wisk until combined. Add the cheese and wisk until melted. Remove from heat.
