Recipe: Southwestern Egg Rolls

3-4 boneless chicken thighs or breast ( medium diced)
1-2 Tblsp cooking oil
6 cups Vegetable oil
1-2 tsp salt
1 -2 tsp black pepper
1 tsp cayenne pepper
1 tsp cumin
1 cardamon
1 tsp onion powder
1 tsp garlic powder
1 Tblsp chili powder
1/2 cup green bell pepper
1/2 cup red bell pepper
1/2 cup can corn (drained)
2 Tbsp cilantro chopped fine
1/4 cup green onion
2 Tblsp jalapeno deseeded and chopped fine
1/2 cup spinach frozen or fresh
1/2 cup frijilois black beans
1 cup shredded cheese
1/4 monterey jack cheese
1/2 cup velveeta cheese ( medium diced)
1 pkg Flour Tortilla 10-12 wraps

1. In a medium size pan add 2 Tblsp cooking oil heat on medium for 3 min then add chicken and 1 tsp salt and pepper until chicken is a showing a little pink add in all vegetables and seasonings cook for 3-5 min, add in 1 tsp salt and pepper and add the cheese to the mix gradually cook for 1 minute until cheese has melted and then remove from stove.
2. On a flat surface take individual tortilla wraps and add 2 full spoons of mix to your wrap about 1/4 on the wrap facing you, not in the center of the wrap but before you reach the center of the wrap, then fold sides of wrap gently to the right and left of you and then gently tuck and roll wrap until you get to the end and secure it shut with a toothpick.

Optional: If you are making wraps for a later time you may seal wraps with a water base by adding water to the end of your wrap and placing wrap in the pan with the seam side down, Lay wraps in pan not touching each other, freeze wraps for an hour, once wraps are frozen remove wraps from pan, they should be completely sealed shut and easily store in a freezer bag until ready to cook.
May store in freezer up to 3 months.
In medium pot heat 6 cups vegetable oil heat to 350 degrees
Gently dunk egg roll in hot grease fry on one side then turn roll and flip to other side fry until nice golden brown. Enjoy!
