In this copycat version of Applebee’s Cajun Shrimp Pasta I’ve not only removed the gluten from the dish but wiped out nearly half the calories in the process as well. Their blackened shrimp dish is seasoned with a Cajun spices and served over noodles with sautéed onions and peppers before it gets tossed a with Cajun scampi sauce. Their version weighs in at a hefty 1170 calories per serving. But, by changing the ratios in the dish to lessen the amount pasta used while increasing the vegetable portion, we can significantly make the dish healthier. To further cut calories I’ve controlled the amount of fat used in the sauce while keeping all of the bold flavor. You won’t miss anything about the original once you taste this one.

Ingredients list
12 oz shrimp, peeled and deveined
1 teaspoon Cajun seasoning blend
4 oz gluten free fettuccine
1 onion, thinly sliced
1 red pepper, thinly sliced
1 green pepper, thinly sliced
1 tbsp olive oil
Salt and pepper to taste
2 cloves of garlic, minced
2 tbsp butter
1 lemon, the juice and the zest
