Ingredients

FOR CHICKEN
4 boneless chicken breasts
½ cup lime juice
4 Tbsp olive oil
¼ cup honey
2 tsp chipotle chili powder
1 Tbsp lime zest
¼ cup fresh cilantro, chopped
¼ tsp sea salt
2 tsp garlic powder
½ tsp ground cumin

FOR RICE
1 ½ cups basmati white rice
2 Tbsp olive oil
1 glove garlic, minced
2 ¼ cups water
1 tsp salt
3 Tbsp lime juice
Zest of 1 lime
1 cup chopped cilantro

FOR PICO DE GALLO
1 lb. tomatoes { 3-4 medium } diced
1 cup diced onion
1 jalapeno pepper seeded and finely minced
Salt and pepper to taste
2 Tbsp lime juice
½ cup cilantro, chopped

FOR BLACK BEAN AND CORN SALSA
1 -15 oz. can black beans, drained and rinsed
1-15 oz can corn, drained
1 tomato, diced
1 green bell pepper, diced
½ cup diced red onion
1 clove garlic, minced
2 Tbsp fresh cilantro, chopped
¼ cup red wine vinegar
¼ cup olive oil
2 Tbsp fresh lime juice
Salt and pepper to taste

FOR GUACAMOLE
1 large or two small avocados- peeled, pitted and mashed
½ of a lime, juiced
½ tsp salt
¼ cup diced onion
1 ½ Tbsp chopped fresh cilantro
1 roma tomato, diced
½ tsp minced garlic
1 pinch cayenne pepper
½ a jalapeno pepper, finely diced

FOR CHIMICHURRI
1 ½ cups fresh parsley
½ cup fresh cilantro
1 tsp dried oregano
3 garlic cloves
¼ small red onion
2 Tbsp lemon juice
3 Tbsp red wine vinegar
¼ tsp red pepper flakes
¾ cup olive oil
Salt and pepper to taste

GARNISH
Tortilla strips
Sour cream, optional
