Another top tip. If you’ve bought some chillis from the supermarket but haven’t used them all up, don’t fret – just get yourself a mesh bag or one of those washing machine detergent tablet bags (unused) and place the chillis inside then hang it up somewhere so they can naturally air-dry. A window or a conservatory that is dry but sunny is a good spot. Dried chillis last for ages and the flavour seems to improve along with the heat. We found that leaving the chillis in the plastic wrapper (for example Bird-eye chillis sold in Tesco come in plastic bag with a few tiny ventilation holes) just made them go mouldy but put them in a mesh bag to dry out and they last indefinately. You can also freeze them but air-dried is better if you need to chop them up finely.
