Today I am making an easy recipe for tinga de pollo. This is a spicy shredded stewed chicken, that is great for tacos, tostadas or even quesadillas, which is what I like to do. This makes a great filling and the spice level is adjustable to your preference.

1 lb boneless skinless chicken breast
2 Tbsp cooking oil of choice
1 tsp lemon pepper
1 tsp season all seasoning salt
1 tsp garlic powder
1 tsp onion powder
1/2 tsp dried Mexican oregano
4 dried guajillo chiles (cleaned, presoaked and softened)
2 chipotle peppers in adobo sauce
1 Tbsp adobo sauce from can of chipotle peppers
1 medium tomato (or 2 Roma tomatoes)
1 Tbsp chicken bouillon powder
1 1/2 cups water
2 cloves fresh garlic
1 small onion (thinly sliced)
salt and pepper to taste
