Today I am making a super easy homemade corn in a cup. This recipe is very versatile and the ratio of ingredients are up to you and your taste buds. I find that using canned corn and heating in the microwave most convenient but you can also heat this on the stove top. The toppings of Mexican lime chili seasoning, fresh squeezed lime, mayonnaise, Mexican table cream and cotija cheese make this so wonderful. This is a great Mexican street food recipe you can make at home.

INGREDIENTS
15.25 oz can of sweet golden corn (drained)
2 Tbsp butter
1 1/2 to 2 Tbsp mayonnaise
1 Tbsp Mexican table cream
squeeze of fresh lime juice
1/2 tsp Tajin chili lime seasoning
1 to 2 Tbsp crumple Cotija cheese (or grated parmesan cheese)
