I just got back from Mauritius where I had my summer vacation. And I got introduced to this amazing hot sauce. It is a very versatile sauce with great flavour, and so easy to make!

The recipe:

– 100g Green Chillis (birds eye type chillies)
– 50g white onion
– 1 clove of garlic (more if you like!)
– a small piece of ginger
– heaped teaspoon of salt
– 2 tbsp of white vinegar
– 2 tbsp of vegetable oil

Method: de-seed the chillis. Then blend everything together into a fine paste. Simmer over a low heat to thicken it up. Easy!
