This is the one soup my family requests more than any other soup.

– 1 pound of HOT Italian Sausage (very important)

– 3 Medium – large potatoes
– 1 small onion, diced
– 3 slices of bacon
– 4 cloves of garlic, minced
– 3 cups of kale, chopped
– 32 oz (4 cups) of chicken broth
– 2 1/2 cups of water
– 1 1/4 cups of heavy cream or half and half

In a large soup pot of Dutch Oven, brown the sausage.
Once browned, removed the sausage to a plate to set aside, leaving behind any rendered fat.
Next cook the bacon followed by the onion.
(Depending on how thick your bacon is, you can cook the onions with it too, but I usually cook them separately.)
Set the onion and bacon aside as well.
Add the potatoes and cook for a few minutes, until they gain some color (optional but I think it adds a nice depth of flavor.)
Cook the garlic until fragrant, about one minute.
Add all the meats and onion to the pot.
Next, add the chicken broth (you can deglaze your pot like I do) and bring to a boil.
Let boil for 20-30 minutes or until the potatoes are tender but not mushy and falling apart.
Add the kale and 1/2 & 1/2 or heavy cream and simmer for about 15 minutes to soften the kale and make it taste less bitter.
